Deboner

Prince Industries has modified its 221 Combination Mechanical Deboner to increase capacity. It extended the hopper on the deboner to allow for easier production of larger products as well as increased throughput. A larger volume of meat can be processed while still providing the highest quality of output and yield. The deboner features a self-pumping system that can pipe the mechanically deboned meat directly into boxes or bags for easy handling, packing, and shipping.

Metal Detection

Fortress Technology introduces the new ICON, the newest addition to the highly successful Fortress Phantom line of metal detectors. It is a touch screen panel and has been designed from the ground-up to be backwards compatible with all Fortress Phantom metal detectors. Using robust quad-core processing, the ICON delivers fast, accurate detection of metal contaminants and detailed data collection. Information gathered is stored in an onboard database and is accessible via USB or wired ethernet.

Saw

Safety and ease of operation are key to Hollymatic’s Hi-Yield 16-5000 Meat Saw. New literature on the saw features bulleted copy on the front, detailing the quick brake function that stops the blade within 1 second, swing open construction that allows for easy cleaning and blade changing, and several other key features of the Hi-Yield Saw. For your free copy of the sales literature, contact Hollymatic.

Conveyor Belt

Wire Belt’s CompactGrid is hygienically designed to protect products, especially from deadly pathogens and allergens. USDA-accepted CompactGrid is made of stainless steel with 70 percent open area, so there is no place for harmful contaminants to hide. CompactGrid is specifically designed to replace hard-to-clean plastic modular belts. Wire Belt’s entire line of Flat-Flex belting products and CompactGrid are accepted by the USDA NSF/ANSI/3-A hygiene standards.

Former

NuTEC Mfg.’s 720 all-hydraulic, microprocessor controlled, multi-outlet forming machine now offers greater versatility. This machine easily adapts to changing production requirements with some simple tooling changes. It can run up to 3,900 patties per hour with the 1-hole mold, or processors can run up to 7,800 patties per hour with the 2-hole mold. A unique vane pump feed system uses a rotating spiral to gently move product to the rotor, eliminating overworking, bridging, and backflow.

Spice Blender

MTC’s Spice Blender is an automated blender of seasonings and dry mixes like soups, gravies and fillings. The stand-alone unit mixes a wide variety of ingredients using the same bi-directional mixing ribbon, which is able to handle all sorts of different spices, regardless of viscosities. The blender ribbon also has a variable speed control, which enables the selection of settings that are most appropriate for blending a specific recipe.

Packaging

Processors of microwavable, ovenable and ready-to-eat foods have a sustainable new packaging choice: Encompass Lite 1 CPET trays from Curwood. Offering up to 15 percent source reduction through process and material improvements, Lite 1 trays are recyclable as #1 where infrastructure exists, and certain applications could incorporate post-consumer recycled content. The trays feature toughness at low temperatures and dimensional stability at high temperatures, so they go easily from freezer to microwave or oven to table.

Curwood: (800) 544-4672, or visit www.curwood.com

Patty Paper

Free patty paper is now available from Patty Paper Inc. This limited time promotion runs through December 31, 2010, and includes a free case of patty paper with a 10-case order. The paper options available in this promotion include single, double, octagonal, and 5/16-inch hole standard items. PPI provides patented FDA approved, individually wrapped paper packages. Tenderizer

Metalquimia has launched a brand new Filogrind 3-option meat tenderizer which offers new processing capabilities and three new regulation options — Basic, Roller-Fixed and Variable Speed. Available exclusively through Nu-Meat, it produces a multitude of cuts in the meat muscle which increase the surface area for extracting proteins. This reduces cooking loss and improves yield. Specially adapted for sliced products, the Filogrind can also prevent the appearance of holes in sliced product and minimize defects in intermuscular binding.

Nu-Meat Technology: (908) 754-3400, or visit www.nu-meat.com

Shelf Life Management

Vitiva extends its customized SyneROX portfolio by introducing “Mix & Match” shelf-life management solutions for meat applications. This advanced line includes natural solutions for a variety of problems typically found in meat production in an ingredient system that can be mixed and matched to cover a wide range of needs. In addition to oxidation management, the formulations allow for the reduction of, or removal of, acetates and other synthetic antimicrobial stabilizers.

Spectrometer

Thermo Fisher Scientific announced the new Thermo Scientific Escan, an in-line guided microwave spectrometer (GMS), that is uniquely designed to analyze and measure multiple key properties of food products to improve costs, quality and brand value. In today’s food processing plants, many analyzers are at-line. The Escan moves the analyzer into the process stream, providing real-time, accurate process information and enables users to save time, materials, production capacity and energy.

Microbial Testing

BioControl Systems’ SimPlate Total Plate Count Color Indicator (TPC-CI) has been granted MicroVal Certificate 2009LR26. SimPlate TPC-CI is a rapid method for quantifying total aerobic plate counts from food samples in 24 hours. SimPlate’s patented Binary Detection Technology produces an easily interpreted color change. Isolation wells on the device are used to confine these color reactions, allowing technicians to simply count the number of positive wells to determine the aerobic plate count of a sample.
