Deli meat has surged in popularity to the degree that it accounts for a sizable share of retail sales, which translates into higher production opportunities for manufacturers of the ready-to-eat (RTE) products.

That’s the good news. The other side is that the ubiquitous impact of Listeria monocytogenes (Lmono) continues to create food-safety problems for manufacturers of RTE products.
