This course is for aspiring entrepreneurs seeking to build food craft skills and grow business expertise in how to own and run a farm-sourced butcher shop. Classes take place throughout Northern California, including Oakland, San Francisco, Chico, and Siskiyou Counties, where you will learn to foster relationships with ranches, slaughterhouses, distributors and customers. You will also gain butchering chops from some of America’s foremost masters of the craft. Spend three weeks immersed in the most innovative and successful butchery businesses in the country, so that you can start your own!
