A Taste of Europe at the Winter Fancy Faire

In a world where food connects cultures and stories, few products express the essence of European culinary identity as clearly as deli meats. This January, the Winter Fancy Faire in San Diego will once again gather professionals, producers, and innovators from across the globe — and among them, European excellence will take the stage with a story of authenticity, sustainability, and refined taste.

At booth 1006, within the Italian Pavilion, visitors will be invited to explore the world of European deli meats through Sip and Savor: Pairing European Wines and Deli Meats, an EU co-funded initiative that promotes the quality, transparency, and cultural value of European agri-food products in the U.S. and Canada. Led by IVSI – Istituto Valorizzazione Salumi Italiani, the program highlights the craft and care behind Europe’s charcuterie tradition — a heritage that continues to inspire modern gastronomy while responding to contemporary values of safety, responsibility, and pleasure at the table.

A Heritage of Craftsmanship and Care

Across Europe, deli meats have always been more than food — they are the result of centuries of expertise, regional character, and deep respect for nature and community. From small artisanal workshops to established producers, generations of makers have refined curing, seasoning, and maturation techniques that define a shared cultural language of quality.

Today, that legacy is matched by one of the most advanced systems of control and transparency in the world. European standards guarantee food safety, animal welfare, and full traceability, ensuring that each product reflects both artisanal know-how and modern accountability. This dual strength — craftsmanship and compliance — has made European deli meats a benchmark of reliability for professionals and consumers worldwide.

For importers, chefs, and distributors attending the Winter Fancy Faire, this combination is particularly relevant: as U.S. demand for authentic, origin-based products continues to grow, European deli meats offer a category that unites history, taste, and trust.

From Farm to Table: The European Model of Quality

Behind every slice of European deli meat lies a system built on precision, transparency, and sustainability. From animal welfare and raw material sourcing to production and packaging, every step is carefully monitored under EU regulations — among the strictest anywhere in the world.

This approach has guided IVSI’s mission since its founding in 1985. As a nonprofit consortium that unites producers, trade associations, and consortia, IVSI has spent four decades promoting the values of tradition, culture, and responsible innovation in the deli meat sector. Through research, education, and international outreach, it works to spread a deeper understanding of how these products are made — and why they remain central to Europe’s gastronomic heritage.

“Europe’s deli meats tell a story of precision and passion,” says Marella Levoni, IVSI President. “They embody our commitment to quality and transparency, while offering the flavor and authenticity that consumers everywhere are looking for.”

Pairing Flavors, Sharing Values

Working together with the Consorzio Tutela Roero, IVSI developed the EU co-funded project Sip and Savor, which brings this story to life by connecting deli meats with another emblem of European excellence: wine. Together, they represent a shared culture of conviviality — a pleasure rooted in balance, craftsmanship, and the art of taking time.

The program’s concept is simple yet powerful: pairing European deli meats and wines as an experience of both taste and meaning. Each product tells a story of its territory, its people, and its respect for tradition, but together they create something more — a dialogue between heritage and modern lifestyle, Europe and North America.

For professionals in foodservice, retail, and distribution, this pairing also translates into opportunity. The versatility of European deli meats — from air-cured specialties like prosciutto and speck to cooked classics like mortadella and prosciutto cotto — allows for creative uses across tasting menus, casual pairings, and premium retail concepts. When matched with expressive European wines, they offer consumers a full sensory journey that celebrates authenticity without excess.

The Products: A Living Heritage

The deli meats featured under the Sip and Savor initiative include some of Europe’s most iconic specialties. Among them are Prosciutto Crudo, the king of European charcuterie, aged to perfection for a delicate aroma and soft texture; Speck, a lightly smoked meat from the Alpine regions; Culatello, a prized cured meat from northern Italy; and Salame, in its countless regional interpretations from mild to spicy.

The selection also includes cooked specialties such as Prosciutto Cotto and Mortadella, celebrated for their fragrant sweetness and velvety texture, as well as traditional seasonal products like Cotechino, emblem of winter festivities. Together, these deli meats represent the extraordinary diversity of Europe’s gastronomic culture — a heritage rooted in local identities, but united by shared values of quality, safety, and care. 44 of these products have been recognized by PDO and PGI certifications that ensure both quality and traceability.

Looking Ahead: A European Story on the Global Stage

The participation of Sip and Savor at the Winter Fancy Faire is more than a showcase — it’s a conversation between continents. By presenting European deli meats and wines side by side, the initiative invites professionals to experience a new form of cultural dialogue: one that connects taste with transparency, and tradition with innovation.

Throughout 2025, Sip and Savor will continue its journey across the United States and Canada with masterclasses, press events, and educational programs designed to engage trade professionals, media, and consumers. Each activity will highlight the core European values — safety, sustainability, authenticity — that define the continent’s food excellence and continue to resonate with today’s global market.

In San Diego, that dialogue begins at booth 1006. There, visitors will have the opportunity to taste Europe’s craftsmanship, learn about the processes behind these exceptional products, and discover how European deli meats — when paired with equally distinctive wines — can inspire new culinary ideas and partnerships across the Atlantic.
