Beasts & Brews, a new restaurant convept/butcher shop, is coming to Colorado Springs, Colo. It will be owned and operated by Jason Nauert, owner and director of the Rocky Mountain Institute of Meat. According to Eater, Beasts & Brews will feature a butcher shop up front and a counter service restaurant in the back, featuring charcuterie plates, dry-aged beef, street tacos and more.
“We’re going for a lot of meat,” Nauert said.
The meat will be locally sourced from area processors, and the meats will be processed and made in-house. Nauert, a former veteran, hopes to hire up to 75 percent veterans in the business.
