A 'fine' job: Foreign-material contamination can have a devastating effect on meat and poultry merchandising, but newer and more sophisticated technologies are enhancing food safety.
As a food-safety lawyer, these three words send shivers down my spine. They are all exceptionally difficult to routinely control in products regulated by the USDA Food Safety and Inspection Service (FSIS). Almost invariably, at least one of these three words is featured prominently in recalls.
Despite the advances in X-ray and metal detection systems, keeping meat and poultry totally free of foreign objects remains an ongoing processor challenge.
Several large-scale recalls have been issued recently for products containing foreign material, which creates headlines that draw a lot of attention to how the industry keeps foreign material from contaminating the food supply.
