2016 American Cured Meat Championships

Held every year during the American Association of Meat Processors’ Convention, the American Cured Meat Championships is a premier event for small and mid-sized meat processors. Attendees at this year’s AAMP Convention line up to submit their products for the 2016 American Cured Meat Championships.
Rick Leiding of Leiding’s Meats and Catering, Danville, Ill. entered several products in this year’s competition, including this bacon.
Judging the ACMC is a two-day affair that requires numerous judges, helpers and coordinators.
Each of the 27 product categories contained anywhere from a dozen to three dozen products.
Jake Sailer of Sailer’s Food Market & Meat Processing, Elmwood, Wis., won the Best of Show Award.
Mike Sloan of Hermann Wurst Haus, Hermann, Mo., was elected into the Cured Meats Hall of Fame.
David Sutton of Newhall Locker, Newhall, Iowa, was elected into the Cured Meats Hall of Fame.
Grand Champion of Bacon (Lightweight): Newhall Locker & Processing, Newhall, Iowa.
Grand Champion of Ham (Semi-boneless): Tiefenthaler Quality Meats, Holstein, Iowa.
Grand Champion of Andouille Sausage: Sixth Street market, Ashland, Wis.
Grand Champion of Small Diameter Cooked & Smoked Sausage: Schmidt’s Meat Market, Nicollet, Minn.
Grand Champion of Jerky – Whole Muscle: Frank Stoysich Meats, Omaha, Neb.
Grand Champion of Ham (Boneless - Commercial): RJ’s Meats, Hudson, Wis.
Grand Champion of Summer Sausage – Cooked:  Dewig Meats, Haubstadt, Ind.
Grand Champion of Meat Snack Sticks: McDonald’s Meats Inc., Clear Lake, Minn.

Jake Sailer of Sailer’s Food Market & Meat Processing, Elmwood, Wis., won the Best of Show Award. His Spicy Pepperoni won the Grand Champion Award in the Cured Specialty Meats Category. Presenting the award was Erica Hering, outgoing AAMP President.
