Farmington Foods, for example, launched a “Big Shoulders Barbeque” like of ready-to-eat smoked barbecue products, while Byron Center Meats added an IQF patty like to its operations. Vincent Giordano Corp. now pasteurizes all of its products using high-pressure pasteurization, done through a sister company.
The companies on this list vary in terms of size, location and type of operations, but they would all qualify as small or mid-sized processors. Their success is an indication that there are many opportunities for independent operators, so long as they are willing to find them.
