Optimal processing of meat and poultry possible with Seydelmann machines
At the IPPE 2014 Seydelmann will be exhibiting several innovative high-performance machines at the booth of its decades-long North-American partner Reiser (Booth 5161, Hall B).
Seydelmann Universal Grinders effortlessly process fresh material and frozen meat blocks down to -13°F/-25°C without changing the worm or cutting set. The drives for the feeding and working worm are frequency controlled and mostly wear and maintenance free. The six speeds of the working worm and the four speeds of the feeding worm can be pre-set steplessly via the control Command 500. This guarantees the clearest cut and a very efficient throughput for every material.
The Vacuum-Cutter K 204 AC-8 has a 200 l bowl content. The vacuum function ensures a longer shelf-life and lasting fresh look of the final product due to a strong reduction of atmospheric oxygen in the cutter bowl. It also leads to a stronger extraction of protein and natural taste carriers. Product consistency and taste improve significantly.
For chicken nuggets production a vacuum-mixer with integrated cooling system is recommended. The two mixing shafts are each driven by a two speed motor and independently switchable forward and reverse. The cooling system ensures ideal temperatures either by injecting CO2 or LN2 into the mixer-hopper via nozzles at the hopper-bottom or by adding CO2-snow via snow-horns in the machine lid.
