The Meat Locker aims to optimize how processors search for information and solve problems in real time
From grant impact to everyday use, The Meat Locker becomes a practical resource for meat processors.

For many small and mid-sized meat processors, finding reliable technical information often means sorting through scattered Extension websites, outdated PDFs, or highly technical documents that are difficult to apply quickly in day-to-day operations. That challenge was a major driver behind the creation of The Meat Locker, an online resource developed by the American Meat Science Association (AMSA) to make trusted, science-based information easier to find, easier to understand, and easier to use.
Launched in 2024, The Meat Locker was developed in part through funding provided by the Meat and Poultry Processing Capacity–Technical Assistance Program (MPPTA). While MPPTA supports a wide range of technical assistance efforts nationwide through multiple awardees, each bringing different strengths and areas of expertise, AMSA identified a critical opportunity to extend its impact by creating a centralized, user-friendly platform that processors could return to as a reliable starting point for answers.
Rather than building another static repository of documents, AMSA focused on developing a site designed around how processors actually search for information and solve problems in real time.
Built with the processor in mind
From the earliest planning stages, simplicity guided the development of The Meat Locker. AMSA recognized that processors often need clear answers quickly, without having to read lengthy reports or decipher academic language.
“It was very important that we built in simplicity from the start,” said Christi Calhoun, Ph.D., Scientific Communication Resource Officer at AMSA. “We focused on making content easy to search, quickly scannable, and understandable so it could actually help solve problems. Just as important, we committed to keeping the site current, with a plan in place to regularly evaluate and update content as regulations, practices, and needs evolve.”
Content is organized around common operational challenges, including food safety, HACCP, sanitation, quality assurance, processing operations, labeling, business management, and workforce topics. Resources are presented in multiple formats, such as short guides, videos, slide decks, curated links, and blogs, recognizing that users absorb information in different ways.
A curated hub, not just new content
One of the defining features of The Meat Locker is its curated approach. Rather than duplicating existing work, AMSA evaluated high-quality materials already developed by university Extension specialists, industry associations, and technical experts. Where gaps existed or information was outdated, AMSA worked with subject matter experts to create or refresh content.
The site is intentionally designed to stay fresh. Guest blog contributions from experts across academia, industry, and allied organizations are added regularly, and all content is logged and reviewed on a recurring cycle to ensure accuracy and relevance.
The Meat Locker and AMSA’s role in MPPTA
The Meat Locker was developed as part of AMSA’s broader role in the Meat and Poultry Processing Capacity–Technical Assistance Program (MPPTA), a USDA-funded initiative designed to strengthen and diversify the U.S. meat supply chain. Through MPPTA, AMSA is one of six national technical assistance providers working directly with small and mid-sized meat processors, supporting efforts related to grant application guidance, business and financial planning, technical and operational support, and supply chain development.

Real-world problems, practical solutions
Beyond The Meat Locker site, processors have requested AMSA’s technical assistance to troubleshoot issues such as jerky process compliance, meeting cooling requirements for a complex cooked sausage, meeting labeling requirements, food safety documentation and more. The grant enabled creating a Technical Resource Officer position within AMSA to respond to these needs and requests.
Looking ahead
Planned future enhancements include expanded meat science content and the potential development of an image-based reference library while continually adding content to existing categories.
