Tyson introduces line of fully cooked, hardwood-smoked chicken for foodservice operators

Tyson Foods' foodservice poultry business is launching Tyson Pitmaster Chicken, a new line of naturally hardwood smoked, fully cooked chicken products, along with new products in the Tyson Red Label Authentically Crispy Chicken line and Tyson Flame Grilled Chicken Wings. 

“Operators are looking for ways to serve the authentic flavor and eating experience consumers expect while managing labor and equipment constraints,” said Courtney Davis, director, foodservice poultry sales, strategy and execution at Tyson Foods. “This expansion to our poultry line gives them more flexibility to build menus with consistent quality and less operational complexity.” 

Product development for the Tyson Pitmaster Chicken product line was led by a Tyson Foods team member senior food scientist, master barbecue cook recognized by the American Culinary Federation and former Kansas City Barbeque Society certified barbecue judge. The chicken is naturally smoked, using a hardwood blend including hickory, rather than enhanced with smoke flavor. Because the products are unsauced, operators can serve them as is or customize them with their own sauces. 

The Tyson Pitmaster Chicken line includes fully cooked thigh pieces and jumbo bone-in chicken wing sections, both forms available in All Natural Naturally Smoked and Naturally Smoked Sweet Heat Dry Rub varieties. The chicken thigh pieces feature dark meat with variable piece sizes for a made-in-house appearance, while the jumbo bone-in wings offer a larger wing format. The Sweet Heat Dry Rub options feature a sweet and spicy dry rub made from a blend of spices and herbs inspired by regional barbecue traditions.

The expanded Tyson Red Label Authentically Crispy Chicken line features uncooked breaded Chicken Breast Chunks in Original and Spicy flavor varieties, made with whole muscle chicken and a hand-breaded texture. The new Tyson Fully Cooked Unbreaded Flame Grilled Bone-In Chicken Wing Sections will also be introduced as part of the company’s expanded poultry offerings. The jumbo wings have visible char marks and a “just-grilled” flavor, and they can be served plain or customized with sauces or dry rubs.
