Top chefs recently gathered in Miami to celebrate all things food at the annual South Beach Wine and Food Festival (SOBE). Among the featured items, guests enjoyed trendy Certified Angus Beef fare at showcase venues where the brand was the official protein supplier.

For the Carnivorous Dinner at Red, the Steakhouse, the five-course meal was prepared by Red’s own Chef Peter Vauthy, as well as Chef Michael Symon, from Food Network’s “Iron Chef America” and ABC’s “The Chew. Vauthy prepared “sushi” carpaccio using filet of rib for the appetizer and strip steak with bone marrow maitre d’ butter for the entree. Symon served smoked short ribs with orange and fennel salad.

At the Best of the Best event, chefs from the nation’s best restaurants served signature dishes. Vauthy prepared dry-aged ribeye with Maine lobster creamed corn. Chef Peter Dale from The National, in Atlanta, served hanger steak and tri-tip. Chef Dale shared that he was excited to feature the tri-tip “a West Coast darling that’s starting to become more familiar on the East Coast.”

Chefs using Certified Angus Beef® cuts at other SOBE events, included Cindy Hutson, executive chef, Ortanique Cuisine of the Sun in Coral Gables, Fla. and Grand Cayman.
