Hot Springs, Ark. has a new meat market. Clampit’s Country Kitchen and Meat Market was started by owner Joey Clampit, who has been involved in the meat business as a cutter at Western Sizzler, Brown’s Packing and Piggly Wiggly stores. He has also worked as a meat manager in the retail sector, reports the Hot Springs Village Voice.

His store reflects bits and pieces he’s seen at other places. Clampit said the “grab and go box” is an example of something he saw elsewhere and wanted in his store’s options.

The store uses Stockyard beef out of Chicago, which he said is owned by U.S. Foods.

“It’s all upper two-thirds choice and prime and every piece has a minimum of 28 days of wet age, which enhances the flavor,” he says.

The store employs 10 people currently and is open Monday through Saturday from 9a.m.-6p.m.
