Lauren Eni Canseco, chief marketing officer at Dietz & Watson, is sharing her top predictions for what will shape how consumers eat, shop and entertain in the new year.

1. Clean, simple proteins become the new definition of “healthy”

In 2026, “healthier eating” won’t be about dieting or cutting out entire food groups. It will center on foods made with real ingredients and short labels that people can trust.

Shoppers are turning to deli meats and prepared foods with no fillers, no artificial ingredients and minimal processing as a dependable source of quality protein. This shift reflects growing distrust of ultra-processed foods and a push for wellness options that don’t strain budgets.

Consumers want cleaner choices at accessible prices, driving the industry toward simpler formulations and more transparent labeling overall.

2. High-protein snacking moves from trend to daily ritual

Snacking has fully replaced traditional meals for many consumers, but in 2026 it’s getting more intentional.

People are reaching for protein-rich bites, portable slices and mini “grazing packs” that deliver satiety without requiring meal prep. What’s new is the expectation of value.

Shoppers want snacks that feel premium enough to enjoy but affordable enough to buy weekly. This convergence of nutrition, portability and price will reshape shopping preferences, pushing brands to create options that are both functional and economical.

3. The rise of “everyday charcuterie” and at-home hospitality

Charcuterie is no longer reserved for holidays or special gatherings. In 2026 it will become a weeknight behavior.

Consumers are assembling “boards” for lunch, grazing dinners and even mid-afternoon work breaks. It’s part practicality, part creativity and part desire for small, affordable moments of indulgence. This pushes demand for reliable sliced meats, cheeses, pickled items and dips that make at-home entertaining feel elevated yet approachable.

The trend also reflects a broader cultural shift toward home-centered experiences, where people want food that feels customizable and visually fun. 

4. Flavor exploration grows, but within a value-first mindset

Consumers still want bold, global and playful flavors, from briny profiles and peppery heat to sweet-savory mashups like dill, garlic-herb and spicy-inspired notes. But they’re not looking to spend more to get them.

In 2026, flavor innovation will be expected to come with budget-conscious pricing, making the deli category a surprising hotspot for creativity. Limited-edition items, seasonal blends and unexpected pairings like smoky-meets-zesty will appeal to shoppers who want novelty.

The winning products will provide adventurous taste, giving people the sense of discovery they crave.

5. Sustainability, transparency and ethical sourcing take center stage

Consumers are more aware than ever of the ethical, environmental and health implications of what they eat. As a result, they increasingly expect transparency around sourcing, production methods and ingredient quality.

For deli‑meat and processed‑meat brands, this means that sustainable practices, clean-label commitments and honest communication about sourcing and ingredient standards will matter more than ever for building trust and loyalty.

From the rise of clean, simple proteins and the shift toward high-protein snacking, to “everyday charcuterie,” using bold but budget-friendly flavors, and growing expectations around sustainability and transparency, the deli category is evolving to meet changing consumer priorities.
