American Association of Meat Processors (AAMP) Executive Director Chris Young was invited recently by the German Butchers' Association to speak to attendees of the 2019 IFFA in Frankfurt, Germany.
Meat competitions are friendly, to be sure. However, the word "competition" should not be overlooked, as many of these state or national events bring together high-quality processors with strong reputations.
Sustainability in terms of resource usage and the employment of energy-efficient processes along the entire value chain is one of the foremost challenges of our time.
